About Us

My name is Kim Dittmar and I am a Colorado native. I am originally from Julesburg—a small town that was centered around a sense of belonging and community. Much of this happened at the local coffee shop with locals discussing their triumphs, worries, and everything in between.

It has been my mission to offer a safe place for people to relax, enjoy a really great latte, and share their hearts with one another. Fort Collins may be growing at an exceptional rate, but that doesn’t mean the small-town charm and welcoming nature of the city can’t survive.

In fact, The Cart is a place where it thrives.

Now, I didn’t always own The Cart and was once a customer. In 2003, I met the then owners, Sam Cincotta and his daughter Corinna Cincotta and the business was known as Espresso Di Cincotta. The business was a coffee cart much like you see on the streets of Europe or Seattle, and was Fort Collins very first curbside coffee business. The family duo had owned and operated Espresso Di Cincotta for a decade at this point and had created a thriving and welcoming business. Cafe Richesse was and continues to be the coffee served from the very beginning and I’m happy to say that many of the original cart customers are still patrons today!

The Cart has evolved since its ‘coffee cart’ beginnings and we are now a full-service coffee shop. Choosing to rename ourselves as “The Cart” is our way of honoring the long history, friendships made, and coffee enjoyed when we were, well, an actual cart!

My wife Christy and I have met the most wonderful people through this small business. We have been blessed by the amazing individuals who have walked in our doors and have left a lasting impact on our hearts. We strive to make every visit a happy one!

At The Cart we like to get to know our customers and make sure to take a ‘small town’ attitude towards making every cup of coffee perfect. Please come in for a visit, enjoy a treat and don’t forget to say hi.
